HEALTHY SUMMER VEGETARIAN BBQ

Hello everybody and happy Monday!

Unfortunately the Summer is coming to an end so it is time to squeeze in one last BBQ and one last strawberry and lime Kopperberg in the garden! 

If you are getting ready to prepare your final bbq of the summer then this is the place to be for the perfect vegetarian treats inspired by a friend of mine. They were that good I had to replicate it all over again the following weekend because I enjoyed it that much.

Being a vegetarian at a BBQ no longer has to be boring, make everyone else jealous with your colourful array this time around.

First of all: halloumi and butternut squash skewers. I drizzled mine with lime, italian herbs and lots of paprika but you can use whatever spices and flavours you enjoy the most. The butternut squash needs cutting into chunks and cooked in the oven for 30-40 minutes. Chop the halloumi into chunks and when the butternut squash has been pre-cooked and left to cool, place on the skewers alternating between the two.

Then, my new favourite: red peppers stuffed with mozzarella. Slice your peppers in half long ways and put half of a mozzarella ball into each half, stuffing in black olives and tomatoes all over and set aside.

Finally, corn on the cob, simple yet delicious! I cover mine in crushed garlic and Italian herbs. Take all of your prepared delights out to the BBQ and it all goes on at once taking about 10-15 minutes. I usually find that the sweet peppers are done first as the mozzarella melts nicely between 5-7 minutes and I like to leave my corn on the cob on the BBQ the longest because I like mine slightly charcoaled. 

Serve with a side salad and golden vegetable rice and enjoy the last few days of Summer!
