BANANA CHOC PROTEIN PANCAKES

Hello friends!

Since I'm a nutter for peanut butter and all things sweet, I have been experimenting with flavours and ingredients to make some hot diggity damn fire pancakes.

Now let me tell you, I have succeeded. My very first pancake stack is a hit and I can tell you now this will be a regular occurrence on the little lifters menu. I used to religiously eat a bowl of oats every morning but since moving to Australia I thought I would start switching things up and experimenting with new ingredients and recipes.

Below is the recipe to the beautiful master piece that you can see above and it is PACKED with protein. You are so welcome.

Pancakes:

2 whole eggs

1 banana

1 scoop of chocolate protein whey

30g wholegrain oats

1 teaspoon of baking powder

1 dash of almond milk

coconut oil

Toppings:

cinnamon

white chocolate chips

coconut yoghurt

natural peanut butter

Method:

  • Measure out the ingredients (I find it makes it easier to throw together)
  • Mash the banana up (you can chop it but I prefer to mash mine to create a banana flavouring rather than banana chunks)
  • Crack the eggs into a measuring jug with the oats, baking powder, banana, almond milk, and whey
  • Mix well or blend depending on how thick you like your pancakes
  • Heat the oil in a frying pan and pour small portions of the mixture in to the pan
  • Use a spatula to flip each pancake (they should be able to fit on to spatula so it shouldn't be too difficult)
  • They should have turned slightly golden, that's when you should stack them up!
  • Feel free to add the toppings I've suggested and used myself or get creative :)
