A HEALTHY HALLOWEEN

Hello everybody and Happy Halloween!

This weeks blog therefore had to be fun and festive so below I have written my own recipe for carved stuffed peppers to enjoy at this time of the year. It is not always easy staying healthy in Autumn and Winter when it is typically the season we crave carb heavy foods. However in this recipe I have included some of my favourite superfoods and grains as a healthier, tastier and lighter alternative to starchy foods such as white potatoes, bread etc.

Carved Stuffed Halloween Peppers

Ingredients

  • 1 large round bell pepper
  • Bachelors Beanfeast (half a pack)
  • half a cup of lentils
  • 1 tbsp mixed herbs
  • 1 tbsp paprika
  • 1 tbsp curry powder
  • 1 tbsp mixed ground spices
  • 1 tsp mixed chillies 

Method

  1. Boil the lentils on a medium heat for 20 minutes
  2. Preheat the oven to 200 degrees. Drain the lentils and add the bean feast mix with the allocated amount of water from the packet. Add all of the spices and boil for a further 20 minutes
  3. Chop the top off of your pepper, carve your halloween face, fill with the lentil and bean feast mix and cook for a further 20minutes in the oven
  4. Carefully take it out of the oven and serve with salad leaves, quinoa and vegetables

Here is my finished masterpiece for Halloween. Get creative and tuck in! Please note this is a relatively small portion size so to feel fuller for longer either have a second stuffed pepper or extra quinoa and veggies on the side.
